Low Carb Turkey Burger Casserole

So I spent my Sunday enjoying breakfast at a new restaurant, going for a long walk, running errands, and watching a movie – which I’m ashamed to admit was 50 Shades Darker and now I’m even more ashamed that I am trying to find the first one to watch again 🤣!!!

I saw a recipe that sounded RIGHT up my alley and one of my New Years Resolutions was to try new recipes, so it was the perfect opportunity to make it on a rainy evening and have leftovers to eat for lunch during the week. I put my own “twist” on it and seriously L-O-V-E-D it, it was so amazing and took all that I had not to go back for seconds!

LOW CARB TURKEY BURGER CASSEROLE

Ingredients:

  • 2 pounds of ground turkey
  • Shredded cheese (1 cup)
  • Chive and Onion mix
  • Garlic Powder
  • Montreal Steak Seasoning
  • Worcestershire Sauce

Topping

  • 1/2 cup of Mayo
  • 1/2 cup of Heavy Whipping Cream
  • 2 eggs

Directions:

  1. Brown the turkey meat
  2. Combine all the ingredients for the meat mixture together (and no I don’t have amounts because I was just eyeing it, plus I’m a Worcestershire freak, so I probably put more of that in than most people would!)
  3. In a separate mixing bowl, combine all the “Topping” Ingredients together
  4. Put the meat in a casserole dish.
  5. Spread the topping over the meat evenly
  6. Sprinkle a little more cheese on top
  7. Bake for 45 mins at 350 degrees.
  8. SERVE and ENJOY!!!

SO GOOD and can’t beat the “Low Carb” part!!!

Chicken and Dumplings

Well day four and I have not had a drink, sadly, I’m not going to say it’s been easy – especially with Taco Tuesday and the nice/ frozen margaritas my friends were enjoying and rubbing in my face. . .but I’m staying strong and already regretting making this promise especially since I am going to Jags playoff game on Sunday now! But I WILL do it, plus I actually enjoy testing my willpower!

Anyway, I vowed to make new recipes this year and with unbearably cold temperatures in Florida (it was 32 degrees today) I decided to go with a nice/comfort meal of Chicken and Dumplings.

I Googled whether it was Chicken AND Dumplings or just Chicken Dumplings.  I guess in reality it doesn’t matter, but don’t want to look like a fool 🤣

I combined a bunch of recipes with whatever was in my pantry and came up with my own yummy version! You can say I cheated, but the “cheat” came out pretty tasty if you ask me! I kept it extremely simple with two tricks:

  1. Crock Pot
  2. Canned biscuits

INGREDIENTS:

  • 2 Pounds of Boneless Chicken Breasts
  • 2 cans of cream of chicken broth (32 ounces)
  • Chicken Broth
  • Can of biscuits
  • Dried parsley flakes
  • Poultry seasoning

In case you forgot, I don’t eat vegetables, so I didn’t include any celery, carrots or onions like I saw in a lot of recipes.

INSTRUCTIONS:

  1. Place chicken breasts at the bottom of crock pot and cover with poultry seasoning.
  2. Add in cans of cream of chicken and 32 oz of chicken broth
  3. Sprinkle parsley flakes over top with a dash of salt and pepper
  4. Cook on low for eight hours
  5. After eight hours shred the chicken
  6. Cut biscuits in quarters and drop in crock pot
  7. Cover and cook on low for one hour
  8. SERVE!

Side note:  I love the crock pot that I was using – it is actually my grandmothers and probably circa 1970, but after dropping in the dumplings, I realized it was likely going to overflow, so I had to pull out my larger crock pot! 🤣

My friends who came over, both went back for seconds and each one said that it was

DELICIOUS!!!

I didn’t get a final picture and actually dirtied up a plate to to take one of the little bit of leftovers I had available.

Chocolate Peanut Clusters

Tis the season for testing your willpower and avoiding all temptations of holiday desserts. . .that is until you see a recipe you have to try! Something that calls for chocolate and peanuts prepared in a crock pot sounded right up my alley and I’m already regretting making these amazing chocolate peanut clusters!

Earlier this week I went to Publix to get all the ingredients and spent a good 10 minutes trying to find the German chocolate and almond bark.  Literally staring in the candy aisle checking out every creamy, chocolatey, amazing piece of sweet goodness the grocery store had to offer. I’m not a sweets lover and had no idea of there were so many options, everything BUT German chocolate and almond bark.  🙄

So I ran to Walmart during lunch and I have to admit that I automatically go in to the store with a negative attitude because the one closest to my office is probably the dirtiest one in town. This time I actually had a good experience, people were extremely friendly and I felt extremely guilty for all the negative thoughts I was having.

Anyway . . .on to the actual recipe which was so easy (I even made after a few margaritas on Taco Tuesday 😝)

Ingredients:

  • 16 ounces of dry roasted peanuts
  • 4 ounces of German chocolate
  • 12 ounces of semisweet chocolate chips
  • 24 ounces of almond bark

Steps:

  1. Place the ingredients in the crock pot in the order listed above (Peanuts, German Chocolate, Chocolate Chips, almond bark).
  2. Cover with a paper towel to prevent the chocolate from lumping together and put the lid on top.
  3.  Cook on low for one hour.
  4. Stir.
  5. Cover with the paper towel again and place the lid on top.
  6. Cook on low for another 15 minutes.
  7. Place parchment paper on a cookie sheet and drop spoonfuls of the clusters on the parchment paper.
  8. Let cool for 2-3 hours

This is such an easy holiday recipe to take to a party, to use as a hostess gift or to make your own holiday basket! Recipe makes approximately 4 dozen – depending how big the clusters.
